My Best Guac Ever


If my guac is a little blue, it's because of spirulina. I add just 1/4 teaspoon to my recipe, for the added nutrition.
A single tablespoon of dried spirulina powder contains 4g protein, Vitamin B1 (thiamine): 11% of the RDA, Vitamin B2 (riboflavin): 15% of the RDA, Vitamin B3 (niacin): 4% of the RDA, Copper: 21% of the RDA, Iron: 11% of the RDA. It also contains decent amounts of magnesium, potassium and manganese and small amounts of almost every other nutrient that you need, per healthline.com.

  • 3 avocados
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon salt
  • 1 vitamin C capsule, to help preserve color
  • 1/4 teaspoon spirulina

    Blend all in food processor.

    Aquafaba Guac

  • 1 cup aquafaba (liquid from cooking or canned chickpeas)
  • 3 avocadoes
  • 12 cloves garlic
  • 1 tsp salt, half tsp spirulina
  • 2 TB lemon juice or white vinegar.
    Makes 1 quart.
